We need:
1 large onion, diced
2 medium potatoes
Zest and juice of ½ lemon
2 smoked herring fillets, cut into medium pieces
½ cup black raisins
4 tbsp yogurt
½ cup fresh parsley, finely chopped
Salt
Freshly ground pepper

In a small pan (or saucepan), sauté the onion for 2–3 minutes with two tablespoons of water until it softens and the water evaporates. Set aside.

Boil the potatoes in salted water for 30–40 minutes until tender. Peel them, cut into medium pieces, and mash them with a fork or a spoon.

Place the herring, sautéed onions, freshly ground pepper, a little salt, lemon juice, and lemon zest into a blender and blend for 2 minutes until a thick paste forms. Remove from the blender, add the mashed potatoes, and mix with a wooden spoon for 3–4 minutes until well combined.

Wash and dry the blender bowl thoroughly and add the raisins, yogurt, and parsley. Blend well and add this mixture to the bowl with the herring mixture.

If you wish, you can mix the two mixtures together, or leave them as they are for a more decorative presentation.

Cover the bowl with plastic wrap and refrigerate the herring salad for 1 hour, until it sets and the flavors blend well.
