Quick Desalting
Place the pieces of salted cod in water at a ratio of 1:4 for 24 hours, then change the water an additional 4–5 times every 3–5 hours.
Ideal Desalting
Place the pieces of salted cod in water at a ratio of 1:4 for 48 hours, then change the water an additional 3 times every 5–8 hours.
Thicker pieces require more time in water and additional soaking.
Desalting should be carried out in the refrigerator.
