Lemon Cod in a Pot

We need:

6 cod fillets, well desalted
1 cup olive oil
2 medium onions, roughly chopped
5 leeks, roughly chopped
5-6 κλωναράκια σέλινο χοντροκομμένα
Spring onion
1 kg potatoes, sliced into rounds
Pepper
Juice of 2–3 lemons
1 tsp all-purpose flour
A little hot water

Pour the oil into a pot and add the onions to sauté. Then add the leeks, celery, spring onion, and hot water, cover the pot, and let the ingredients soften slightly.

Add the potatoes in layers on top of the vegetables and add more hot water until they are just covered. Add pepper, cover the pot, and let cook for 10 minutes.

Add the cod pieces and allow the food to cook. At the same time, prepare the sauce: in a bowl, add the lemon juice and flour and whisk until combined.

Add 3 tablespoons of broth from the pot where the food is cooking and mix well.

After about 5 minutes, add the sauce to the pot, gently shake the pot to combine, and serve.
