We need:
2 smoked herring fillets, finely chopped (½ herring in total)
1 small onion, finely chopped
1 clove garlic, crushed
2 tbsp honey
½ cup olive oil
Juice of one lemon
Zest of one organic lemon (optional)
½ cup breadcrumbs from white bread
½ cup dill, finely chopped

In a small pan, gently heat a little olive oil and sauté the onion with the garlic until the onion softens and sweetens. If you prefer, you may skip this step so the onion retains its sharpness, making the spread more intense.

Place all the ingredients in a blender except the zest, breadcrumbs, and dill, and blend. Gradually add the breadcrumbs until you achieve a creamy but relatively firm texture. Transfer the mixture to a bowl where it will be stored, add the lemon zest and dill, and mix well.

Those who have a hand blender can blend the ingredients directly in the bowl where the spread will be stored, provided the blender fits the bowl. If you want to add more aroma to the spread, you may add a little grated smoked cheese (from the thick side of the grater). Leave the spread in the refrigerator for a few hours or overnight before consuming, so all the flavors can blend.
