We need:
1 kg cod fillet
2 eggs, beaten
A little all-purpose flour
Breadcrumbs
Rosemary
1 tsp mustard powder
Oregano
Salt
Pepper
Olive oil
Lemon juice

After desalting the cod, rinse it and allow it to drain. Prepare three plates: one with the egg, one with the flour, and one with the breadcrumbs mixed with the spices and herbs.

Preheat the oven to 190°C (fan-assisted).

Pass the fillets through the flour, then the egg, and finally the breadcrumbs, and place them in a non-stick baking dish.

Drizzle well with olive oil and bake in the oven for 30 minutes.
