*Tarama LYBE comes from Icelandic cod eggs (Gadus morhua), which are freshly picked and thus retain their natural pink-salmon color, without the addition of dyes .
*Tarama PYTHEAS comes from pickled fish eggs from Iceland and Norway that have a less intense color and is what we call “white tarama”.
*The Pink Tarama Paste is made from pickled fish eggs with the addition of 8% soybean meal. In Tarama Paste we add the natural dye “Carmine”, which gives the Tarama Salad the pink color that we all know.
The Pink Tarama Paste is based on the recipe of grandfather Giannis Lyberopoulos that started in Piraeus in 1956 and was the basis for the classic recipe of the Greek Tarama Salad of that time.
Even Mr. Giannis’ wife, Mrs. Irene, wanted Tarama Paste instead of Tarama LYBE!
*The Cod Roe preparation is prepared from pickled fish eggs with the addition of soybean flour in higher proportions than in Tarama Paste aiming to reduce the cost.
The color in the preparations is more intense, due to the fact that soy absorbs more color.
